Sillyaks started with Jenny. My partner has severe gluten and dairy allergies — and if you’ve ever lived alongside someone with serious food allergies, you know exactly how it feels. Eating out becomes a negotiation. Every menu is a minefield. And at home, it’s too easy to end up cooking two separate meals, leaving someone feeling like the difficult one at their own table.

So I went back through years of recipes — dishes I’d been cooking professionally for over a decade — and challenged myself to recreate every single one without gluten or dairy. Not to water them down. To make them genuinely, undeniably good. That challenge became Sillyaks.
Because nobody should feel excluded at mealtimes. Especially not in their own home.
